On Tuesday, September 5th, we welcome Kim Prince of hot chicken royalty to serve up the dish that took the country by storm and tell us a little about its unlikely origins… 

THE EVENING

The evening will start with an hour to mingle and meet the Prince family (6:00-7:00 PM). We ll break bread (with pickles) at 7:00PM. The meal will be served family style, with beer and wine on flow, just like the original service of the first Prince family establishments of the 30s. The good times will roll until 9:00.

CHEF KIM PRINCE 

Kim Prince is a third-generation restauranteur with a knack for frying chicken. She recalls being the pickle bucket girl at the age of 8 in her family’s restaurant, Prince’s Hot Chicken Shack, located in Nashville, TN.  It was here, that the Prince family was recognized and awarded the creators of Nashville Hot Chicken (since 1930’s). 

In 2016, Kim started a pop-up called Hotville Chicken, recognized by Los Angeles Magazine as the best New Restaurant in Jan 2020 and made the Times 101 Best List consecutive years 2020-2022. Hotville has also been featured in and on: CNN, The Guardian, Food Network’s Great American Food Truck Race, and countless other media outlets.

Kim is a founding member of Regarding Her Food, a charitable organization created by, and for, women-owned restaurants in L.A.  Re: HER provides small business grants, mentorship and resources to women owned food businesses.

ESTERS WINE SHOP & BAR

Esters is a community wine bar and shop in the Telephone Building—a 1937 Art Deco landmark in downtown Santa Monica. Contrary to popular belief, we’re not named after anyone called Ester. Esters are the compounds found in wine that hold its aroma – when you swirl your glass, you release the esters. That was Kathryn’s idea, and she’s the co-owner with her husband Tug, alongside the restaurant group’s co-owners Josh Loeb and Zoe Nathan. The Rustic Canyon Family is a collection of beloved, chef-driven dining destinations which includes Rustic Canyon, Huckleberry Bakery & Cafe, Sweet Rose Creamery, Milo + Olive, Cassia, Birdie G’s, and The Dutchess. The group embraces seasonality and makes as much as possible in-house using classic craftsmanship and technique, sourcing the highest-quality ingredients from local farmers and vendors with sustainable practices. Each restaurant takes “family” to heart, by ensuring all guests, as well as employees, feel at home, and leave satisfied, nourished and inspired.

THE STORY

Long before Nashville Hot Chicken was a household name and culinary genre all on its own, we have the story of a tall, dark, and handsome man with a history of staying out a little too long and coming in a little too late. That man’s name was Thornton Prince III, great-great uncle to Chef Kim Prince of Hotville Chicken. 

We won’t spoil the story… But rest assured it does get spicy *XXHot* and the Prince family is here to tell it. Join us as we roll out the red carpet for Hot Chicken Royalty, Monday, August 21st.
